I prescribe this to any family to encourage closeness among family members, and all round happiness etc. It looks like a very thin latex (Surgical Gloves) Sheet to introduce with an anology! It was known to my Grand Mother and Mother only - now my wife and hence I may say it is an authentic, old, chettinad - special item similar to the other lesser known items like Umayal Achi's Koozh Receipe.
 
Required Ingredients:
 
Materials: 200 gms - Raw Rice of any variety like IR 20, Ponni etc.
Required amount of Salt and water

Equipment: Mixie, Burner, Special Vessel as described above
 
Cooking Instruction:
 
More than the procedure I should mention that this requires a special vessel. Typically it can be a vessel of a small (Home made) dosa diameter size with a flat lid to cast the Sothu vadai above the Water (like Idly) and a lid (with a small rim) to cover it. Simple only; but difficult to see such a vessel now in the shop!

Coming to the procudure, again it is very simple only. Soak the rice in water for about half an hour. Grind it as smooth as possible in a Mixie with enough water. Add salt and water as per the original receipe. If one prefers, any modification can be done. To start with the additives like - Tomatoe, Chilli Powder onwards. Remove from the mixie and add enough water to make the rice very fluid (Running Fluid consistency).

Now boil 200 ml water in the special vessel. Smear a drop of ghee all over the flat lid. Pour a Tea spoon full of the rice liquid and rotate the lid in such a way that it spreads the lid area 100 %. Now leave the lid with the spread on the vessel and cover. With in a fraction of a minute it is ready. So you keep another lid ready with rice liquid spread. May be one needs 5, 6 such lids to replace in quick succession. When you lift the cover, replace the lid with a new one and cover it. Then peel the skin like Sothu vadai and serve hot immediately to the one who is sitting next to you. He may eat so fast you may not be able to feed him with a single burner and 6 Lids at your maximum efficiency. So look for an assitant. I am sure, you will enjoy the sothu vadai and the atmosphere it will create in your house.
